Bah Kut Teh (Pork Bones Tea) Recipe

This is a simple, slow cooked late night stew is a favorite of the Hokkien people of Kelang. It is made in special clay pots soaked in water and is the perfect mate for Chinese tea.

Ingredients:

  • 2 tbsp vegetable oil
  • 2 cloves smashed garlic
  • 1 tsp five spice powder
  • 1 cinnamon stick
  • 3 star anise
  • 6 cloves
  • 1 lb pork ribs
  • 1 tbsp dark soy sauce
  • 5 cups water

Steps:

  1. Fry garlic – one or two minutes
  2. Add meat slices and fry – three or four minutes
  3. Add soy sauce and water
  4. Bring to boil
  5. Lower heat
  6. Simmer – one hour
  7. Serve with rice side dish

Serves 4.
