Satay Sauce Recipe

Satay sauce is a rich peanut and coconut based sauce used in Southeast Asian cuisine. This thick and creamy sauce is usually served with grilled meat (chicken or beef). However, it is also suitable for use over vegetables and rice. Satay sauce is a pleasant combination of tastes. It is both sour and sweet. It is hot and salty as well. Satay sauce is intensely rich due to the fats contained in the coconut milk and peanuts. In fact, many people prefer to thin it out with water in order not to have the sensation of being overloaded with this sauce.

Ingredients:

  • 1 Onions
  • 2 Garlic cloves
  • 2 Candlenuts
  • 2 stalks Lemon grass (white part)
  • 2 dried red chillies that have been soaked in water and cut into small pieces
  • 4 tablespoon peanut oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground Turmeric
  • 1 ½ Coconut milk
  • 2 tablespoon Tamarind water
  • 1 ½ tablespoon Sugar
  • 1 teaspoon Salt
  • ½ cup peanuts that have been chopped

Steps:

  1. Blend onion, garlic, candlenuts, lemon grass and chillies into a paste.
  2. Heat oil in a frying pan and cook the paste for a few minutes.
  3. Stir in the coriander and turmeric.
  4. Pour the coconut milk and allow to boil.
  5. Pour the tamarind water, sugar, salt and peanuts and continue heating for about 2 minutes.
  6. Allow cooling before use.
