Vegetable Stock Recipe

Vegetable stock is very useful in a variety of dishes. It is an excellent substitute for chicken stock and can be used for vegetarian meals. Basically stock is a flavored liquid. It is used to make soups and sauces. Stock is made by simmering various ingredients in water. Vegetable stock uses only material of plant origin. Vegetable stock is lighter and can be conserved for a longer period. Generally, stock is preserved in the freezer and taken out when needed.

Ingredients:

  • 2 Tomatoes
  • 1 tablespoon Vegetable oil
  • 2 finely sliced onions
  • 2 finely chopped carrots
  • 2 Celery stalks cut into minute bits
  • 6 Parsley stalks
  • 6 cups boiling water

Steps:

  • Cut the tomatoes and remove the seeds.
  • Heat oil in a pan and add onions, carrots, parsley stalks and tomatoes and allow cooking for 5 minutes.
  • Water is put in the pan and brought to a boil. Continue heating for about 10 minutes.
  • Sieve out the vegetables and freeze the liquid for later use.
